Not all sugar is vegan. Make sure you buy sugar that has a vegan certification!
Yield: Makes 4, eight inch cakes
What do I need....
4 cups white sugar
6 cups all-purpose flour
3 teaspoons baking powder
2 teaspoon baking soda
2 teaspoons salt
2 cups unsweetened soy or almond milk (you can use regular milk here as well)
2 cups water
2 tablespoons white vinegar
1 1/2 cup vegetable oil
1 tablespoon vanilla extract
How do I make this....
-Preheat oven to 350 F and spray pans with nonstick cooking spray.
-Using a stand mixer and whip attachment, combine sugar, flour, baking powder, salt and baking soda in the mixer and turn on low speed. This will sift the ingredients.
-Add vinegar to the milk and set aside.
-Add vanilla to the oil.
-While the mixer is running on low, add the oil mixture, milk mixture, and half of the water.
-Mix until incorporated and no lumps are found.
-Add the last bit of water and blend until fully incorporated.
-Fill pans and bake for 30-45 minutes, checking the cakes at 30 minutes for doneness. When fully baked, a toothpick inserted into the cake should come out clean.
Confetti Cake
- follow all steps above
- when the batter is mixed and ready to pour into the pans, fold in 1 cup of sprinkles and mix until well distributed.

I use this recipe every year for my two boys birthday. I always get loads of compliments and people going back for more cake. I even had someone who doesn’t like cake, go back for more of thiS. It is a very dense and heavy cake but we love it.
I made this vanilla vegan cake, and it was dark and heavy. Had the texture of cornbread almost. It tasted okay and I used very light vegetable oil for the oil, but it did not look vanilla on the outside at all. I use the chocolate recipe all of the time so I was super confused why this did not turn out - even made it twice to see if I did something wrong and they both turned out the same. :-(
I made this cake today and noticed that one of the layers collapsed quite a bit, and the others are starting to as they cool! Why!?!? I’ve made the chocolate one before and this didn’t happen. I checked it at 30 minutes like the recipe suggests, but now I’m thinking I shouldn’t have!
This was such a great delicious dessert! It made my tum tum grumble like water in a pot starting to boil before putting the pasta in😋
