This recipe is great for pressure piping but would be too airy for string work!
Note: Confectioners sugar in the US contains cornstarch, if you are making this recipe in a country where the confectioners sugar is pure, you may need to increase the sugar content so get the volume you need!
What you need….
4 oz. pasteurized Egg Whites
14 oz. Confectioners Sugar
How to make this…..
Place egg whites and sugar in the bowl of a stand mixer fitted with the whip attachment.
Mix on low until incorporated and sugar is fully dissolved.
Turn mixer speed to high and whip to full peaks, about 5 minutes.
The mixture should be white and have the consistency of marshmallow fluff.
